  1. Peel the garlic clove and rub the inside of a heavy saucepan or fondue pot vigorously with the cut side of the clove.
  2. Pour the dry white wine into the prepared pot and heat it over medium-low heat until it is hot but not boiling.
  3. Toss the grated Gruyère cheese with the cornstarch in a bowl to coat evenly.
  4. Add the cheese to the hot wine by handfuls, stirring constantly and in a figure-eight motion until each handful is fully melted before adding the next.
  5. In a small bowl, mix the kirsch with a little bit of the cheese mixture to form a smooth paste, then stir this into the main pot.
  6. Cook the mixture, stirring constantly, until it is smooth and just begins to bubble. Do not let it boil.
  7. Season with freshly grated nutmeg and black pepper to taste.
  8. Transfer the fondue to a heated fondue pot and keep it warm over a low flame or tea light candle.
