  1. Preheat oven to 275&# 194;°F (135ðC).
  2. In a large bowl, combine 2 cups flour, 1/2 cup confectioners sugar, and lemon zest.
  3. Add 2 slightly beaten egg yolks and 2 sticks of softened unsalted butter to the dry ingredients; beat until combined.
  4. Divide dough into two balls: one small (1/4) and one large (3/4). Wrap and chill for one hour.
  5. Press the large dough ball into a 9-inch springform pan, forming a crust that covers the bottom and comes up 2 inches on the sides.
  6. In a separate large bowl, beat 1 lb cream cheese and 1 lb drained cottage cheese until fluffy and smooth.
  7. Add 2 cups confectioners sugar, 1/4 cup flour, and 1/4 tsp salt to the cheese mixture; beat until well combined.
  8. Add 6 large eggs one at a time, beating well after each addition.
  9. In a small bowl, dissolve 2 tbsp instant coffee in 2 tbsp Amaretto liqueur.
  10. Stir the coffee-amaretto mixture into the cheese batter and mix until uniform.
  11. Pour the filling into the prepared crust-lined pan.
  12. Bake at 275ðF (135ðC) for 1 hour and 10 minutes.
  13. While baking, roll out the small dough ball and cut into thin strips.
  14. After 1 hour 10 minutes, remove cake from oven and immediately increase oven temperature to 350ðF (175ðC).
  15. Weave the dough strips over the surface of the cheesecake, trimming excess dough.
  16. Press the ends of the strips firmly against the side crust with the back of a spoon.
  17. Return to oven and bake at 350ðF (177ðC) for 15 minutes longer, until lattice is golden brown.
  18. Turn off oven and leave cheesecake inside with door ajar for 1 to 2 hours to cool gradually.
  19. Refrigerate cheesecake until completely chilled, at least 4 hours or overnight.
  20. Remove springform sides and dust top with confectioners sugar before serving.
