  1. Cut tomatoes into wedges to make about 2 cups; set aside.
  2. Cut beef liver into 1/2-inch wide strips; set aside.
  3. In a medium bowl, combine soy sauce, sherry, cornstarch, sugar, salt, and ground ginger.
  4. Add liver strips to the bowl; toss to coat and marinate for 15 to 20 minutes.
  5. In a medium skillet or wok, heat 2 tablespoons of water over medium-high heat.
  6. Add liver and marinade to the skillet.

  12. Add reserved liver and marinade back to the skillet.
  13. Cook and stir until meat is cooked through but still pink in the center, about 2 minutes.
