Description

This International dessert features Chocolate cake, see recipe, Malibu*, Oranges, peeled & diced. It delivers smooth, comforting richness, sweet, indulgent flavor. A wonderful way to end any meal, especially on special occasions. Simple to make with ingredients you likely already have on hand, this is a recipe you will come back to again and again.

  1. For this recipe, you need 1/2 of the chocolate cake recipe, so
  2. freeze half or
  3. set aside for future use.
  4. cut up the chocolate cake into good bite-sized pieces &
  5. place in a medium sized serving dish.
  6. Soak with the malibu.
  7. Arrange the chopped oranges over the cake.
  8. Set aside.
  9. In a food processor or blender, blend the tofu until smooth.
  10. Add the remaining ingredients & blend until well mixed.
  11. Spread over the top of the cake & oranges.
  12. Chill until ready to serve.
  13. I liked the coconut-pineapple taste that the malibu provided, you could use orange juice in
  14. place if you desire.
  15. Use some rum extract instead of rum & reduce the amount.
  16. Or use a fruit juice that might
  17. combine well with coconut but that is clear, otherwise the topping will look a funny colour.
  18. VARIATIONS: Use canned fruits, fruit salads or other fresh fruits of your choice.
  19. I find that naturally juicy fruits work the best.
  20. Use a plain sponge cake instead of the chocolate cake.
  21. Garnish with strawberries or kiwis before serving.
