Description

A hearty vegetarian loaf featuring a savory filling of sautéed vegetables and mashed potatoes, encased in a pliable whole wheat dough. Baked until golden, this dish offers a comforting, home-style meal perfect for lunch or dinner. The combination of tamari, orange juice, and fresh herbs creates a complex, aromatic flavor profile.

Ingredients

Directions

  1. Heat oil in a skillet Add the garlic & onions & saute for 3 minutes.
  2. Add the carrots, celery, green peppers & mushrooms & continue to saute for 5 minutes.
  3. Season well with the herbs & spices, including the tamari.
  4. Combine the mashed potatoes with the soy milk.
  5. Add the saute to the potato mixture.
  6. In a bowl, combine the oil, orange juice & salt.
  7. Gradually add the flour til lthe texture is moist & pliable.
  8. Roll the dough out on a floured board.
  9. Place rolled dough in a rectangular casserole so that the edges flop over the sides.
  10. Spoon the vegetables into the centre of the dough.
  11. moisten the edges of the dough & seal into a loaf shape.
  12. Place on a cookie shhet or leave in the casserole, making sure that whatever you use is oiled to prevent sticking.
  13. Bake for 40 minutes at 375F (191°C).
  14. Serve with vegetables on the side, such as mashed turnip, peas or beans, & cabbage.
  15. Or whatever.
