PERi-PERi sauce is a perfect blend of fresh ingredients, including bird's eye chili peppers, herbs, and spices. This easy-to-make sauce is adaptable to your heat preference and adds a burst of flavor to any dish. In just a few simple steps, you'll have a delicious homemade PERi-PERi sauce that everyone will love.


  • 10-12 fresh bird's eye chili peppers
  • 1 red bell pepper, seeded and roughly chopped
  • 1/2 cup fresh cilantro (coriander), chopped
  • 1/2 cup fresh parsley, chopped
  • 4 cloves garlic, peeled and minced
  • 1/2 medium onion, chopped
  • 1/2 cup olive oil
  • 1/4 cup red wine vinegar
  • Juice of 1 lemon
  • 2 teaspoons smoked paprika
  • 1 teaspoon oregano
  • 1 teaspoon sea salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon sugar (optional)


    Prepare the chili peppers by removing the stems and seeds, then roughly chop.

    1. Combine all ingredients in a food processor or blender and blend until smooth.
    2. Taste and adjust seasoning according to your preference.
    3. Transfer the sauce to a clean glass jar or airtight container and refrigerate for at least 2 hours.
    4. Use the sauce as desired on grilled chicken, seafood, vegetables, or as a marinade or dipping sauce.

    2. Substitute apple cider vinegar for red wine vinegar for a slightly sweeter taste.
